Red Velvet Cake Recipe

Ingredients

300g Self Raising flourred velvet push pops
400g Caster Sugar
50g Cocoa Powder
285g Butter, melted
135g Beetroot, cooked and grated
4 Eggs, beaten
125ml Milk
2tsp Vanilla Extract
Filling
50g Cream Cheese
12tsp Vanilla Extract
225g Icing Sugar

Method

Preheat oven to 180oC Gas Mark 4 and grease two 7” round cake tins

Combine all the dry cake ingredients together – flour, sugar, cocoa powder

Mix the wet ingredients together – butter, eggs, milk

Place dry and wet ingredients together and mix well

Add the beetroot, stir until evenly distributed

Split mixture between evenly between the two tins and bake for 25-30 minutes

Turn out and allow cool completely before icing

To make the filling, whisk the ingredients together until fluffy

Smooth over the top of one cake and place the other on top

Dust with icing sugar
